Carciofi con Patate


2 Artichokes

6 Small Potatoes

1 Lemon

Olive Taggiasche

Parsley

Garlic

 
  1. Clean the artichokes: cut the top third off & peel off the outer hard leaves

  2. Cut in quarters and remove the hay

  3. Put into cold water with some vinegar

  4. Meanwhile, quarter the potatoes

  5. Sauté the garlic in olive oil, then add the artichokes

  6. Finally, add the potatoes, olives, some water and salt

  7. Let simmer until the potatoes are soft

  8. Meanwhile, chop the parsley and squeeze the lemon

  9. Serve adding lemon juice, parsley and olive oil
