White Beans with Cime di Rapa and Oranges


100g White Beans (soaked overnight)

200g Cime di Rapa

1 Orange

1/4 Red Onion

Raisins


  1. Cook the beans with plenty of water on a low heat with some rosemary for about 1-2 hours, until tender. Do not add salt!

  2. Meanwhile, slice the red onion and put the slices into some red wine vinegar. Put the raisins in boiling water.

  3. Prepare the cime di rapa: break off the florets at the stem base, remove the thick stems, cut the thin stems and leaves into small pieces. Boil in water for 10 minutes, remove and add into a pan with some olive oil and chilly for another 10 minutes

  4. Fillet the orange

  5. As soon as the beans are tender, mix with cime di rapa, orange, raisins, onion (without the vinegar)

  6. Season and serve
