Salad with poached egg & goat cheese

This is one of my favorite salads, especially with bitter greens from the farmers market.


goat cheese

egg

speck

bitter greens, like arugula or radicchio

tomato

pumpkin seed

mustard, lemon, honey & olive oil

Boil water in a pot. In the meantime, wash the greens, cut the tomato and put both into a bowl. Prepare the dressing using salt, lemon, mustard, honey and olive oil and mix with the greens and the tomato in the bowl. Poach the egg for 3 minutes. In the meantime, roast the pumpkin seeds in a pan and set aside. Fry the bacon stripes in the same pan, set aside and fry the goat cheese until it starts melting. Put everything together and enjoy.
