Courgette Bread

There exists nothing better than home made bread.

1kilo flour, type 550

275ml tepid water

2 packs of yeast

1 tbs sugar

2 tbs salt

3 courgettes

1 handful thyme

200g goat cheese



Put the flour in a bowl, make a hole in the center and add water, yeast, sugar, thyme and salt and mix well. Grate the courgettes and add to the mixture and knead until satin-smooth.

Let rest for 30 minutes . Knock back the dough (punch the air out and pull the dough in on itself) and add the goat cheese and mould the dough into two balls and let rest for another 30 minutes.

Bake for 30-45 minutes at 180°C until it sounds hollow when taped underneath.
