Shakshuka

Originally a Middle Eastern breakfast dish, for me usually a fast, nourishing dinner with just a few ingredients.

1 onion

4 peppers

2 cans pelati

1 tbs Ras El Hanout

4 eggs

1 parsley/koriander

oil, salt, pepper

 

Slice onions and peppers, chop parsley. heat oil in a pan, add the onions until glassy and then add the peppers and the ras el hanout spice. Cook for about 5 minutes before adding the pelati,

let thicken for approximately 15 minutes.

Make 4 holes into the sauce and put each egg in a hole and wait until waxy.

Garnish with parsley and oil and serve with white bread.
